2 Easy No-Bake Snacks

        

We've all done it. You're hungry. You're tired. You're in a rush. And so you grab the first (not so healthy) snack you can get your hands on.
In my quest to create snack recipes that are simple and delicious, while also not breaking the caloric bank, I have come up with two proven winners. My Perfect PB Bites and my Biscotti Truffles are easy and require no baking. Got that? NO BAKING! Both can be whipped up in a matter of minutes and combine high quality healthy ingredients with delicious flavors anyone would love.



The Ingredients

1 cup Natural Peanut Butter 
2/3 cup Honey
3 cups Rolled Oats
1 Scoop Chocolate Whey Protein Powder (optional) 



The Method 

In a heat proof bowl combine Peanut Butter, Honey, and Protein Powder and microwave in 30 second intervals until the ingredients are melted and liquified. Mix in Oats and roll into balls. Chill on a parchment lined tray in refrigerator about 30 minutes or until bites set up. Store in an airtight container in the refrigerator for up to 2 weeks. 







The Ingredients

1/2 cup Natural Peanut Butter
3 tablespoons Honey
dash of fine Salt
2/3 cup of Chocolate Whey Protein (I use IsaLean by Isagenics)
1/4 teaspoon of Anise Extract (you can substitute your favorite flavor)
Ground Roasted Salted Pistachio nuts, for garnish

The Method

In a large mixing bowl, combine Peanut Butter, Honey, Salt and Protein powder. Mix well and add in Anise extract. Mixture will be very dense and stiff. Using a tablespoon, scoop dollops of the mixture and roll into a ball. Gently toss in ground Pistachios to garnish. Chill in the refrigerator until the truffles set, about 20 minutes. 

Store in an airtight container in the refrigerator for up to two weeks. You can make these in a variety of flavor combinations. Try Vanilla and Toasted Coconut, Lemon and Ginger, or Orange and Cocoa Powder, or, create your own combo of tastiness. Enjoy!
