Wendy's Breakfast Cookies

                                   

Breakfast. The most important meal of the day. I was fortunate enough to get this recipe for my friend Wendy. Not only are they super easy and quick to mix up, they are also healthy and a great source of
protein in the morning. For breakfast I can just grab two of these and rush out the door and they are so good even my son loves them. The batter doesn't require a mixer and can be kept in the fridge for several days or the freezer for up to a month. Mix up a batch when you have an extra few minutes and you will be thanking Wendy too.

The Ingredients

                                  

1/2 cup smooth Peanut Butter
4 ounces Unsweetened Apple Sauce
1/2 cup Honey
1 teaspoon Vanilla extract
1 cup rolled oats
1/2 cup Whole Wheat Flour
1/4 cup Nonfat Milk
2 teaspoons Cinnamon 
1/4 teaspoon Baking Soda
1 scoop Whey Protein (I use chocolate but vanilla is yummy too)


The Method

Mix all ingredients together, using a spoon. That's it. Really I promise. The batter should be very sticky. Spoon cookies onto an un-greased baking sheet and bake 10-12 minutes. Cool on the sheet and store in an airtight container. Enjoy!
